Baked Zucchini Fries - Gluten Free Dairy Free

It’s that time of year where there are too many zucchinis in your garden that are ready to be picked. You already gave your neighbors a bunch of zucchinis so now you are looking up recipes to add zucchini to.

This is a simple and delicious recipe to use up 2-3 zucchinis. Hope you all enjoy!

Ingredients:

2-3 medium zucchinis, cut into a thin french fry shapes

¼ cup almond flour or any gf flour. I use the Kings Arthur Almond Flour

¼ cup nutritional yeast

¼ tsp sea salt

1 tsp garlic powder, you could try finely chopped chives as a substitute for the garlic if you are on the low fodmap diet.

½ - 1 tsp cayenne pepper, depending how much spice you want.

2 eggs



Directions:

  1. Preheat the oven to 350 F.

  2. In a small mixing bowl, add all the dry ingredients and mix well.

  3. In another small mixing bowl, add 2 eggs and whisk.

  4. Dip a zucchini strip into the eggs until evenly coated. Then dip the zucchini in the dry ingredients. Add to a greased baking sheet. Do this for all the zucchini strips.

  5. Bake for 15 -20 mins. Take the zucchini fries and flip them. Then bake for an additional 15-20 mins until golden.

  6. Serve with Chick-fil-a sauce or dairy free ranch dressing. Serve warm.
