This is a perfect summer appetizer that is free from gluten, dairy, garlic, onion. It is a great low fodmap diet appetizer as well. I found this recipe on Low FODMAP Cucumber Bites with Crab - Fun Without FODMAPs.
Ingredients:
12 oz lump crab meat
4 cucumbers
2 tbsp chives, chopped
1 tsp sugar
1 tsp hot sauce, if you are on the low fodmap diet use Tabasco Original Red Sauce
¼ tsp salt
½ cup mayonnaise, if you are on the low fodmap diet use the Hellman’s Mayo brand.
Paprika for garnish
Directions:
1. Peel cucumbers and cut approximately one-inch-thick pieces. Scoop out the seeds.
2. In a small mixing bowl, stir the mayo, sugar, chives, hot sauce, and salt. Then add in the crab meat and stir.
3. Add a spoonful into the scoop out spot on the cucumber.
4. Refrigerate for at least 2 hrs before serving. Serve chilled.
