Mushroom Alfredo Pasta - Gluten Free Dairy Free

I love this recipe! It is so easy to make and delicious! I might love this recipe because I am a big pasta and carb person. LOL

Ingredients:

8 oz mushrooms, sliced

8 oz gluten free pasta, I use the brand La Fabbrica Della Pasta Gluten Free. I found this brand at a local market. Any gluten free pasta brand would work for this recipe.

2 tbsp dairy free butter, I use Smart Balance sticks.

1 cup dairy free heavy cream, I use ¾ cup of oatmilk and ¼ cup of melted dairy free butter and whisk together to make the heavy cream.

6 oz dairy free parmesan cheese, I use 1 and ½ cartons of Follow Your Heart parmesan cheese

¼ cup pasta water

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

1 tsp pepper



Directions:

  1. In a large pot, cook the gluten free pasta and reserve ¼ cup of water before draining the pasta.

  2. In a large skillet, add olive oil and saute the garlic until slightly brown.

  3. Add the mushrooms and 2 tbsp butter. Saute until mushrooms are slightly softened.

  4. Add the seasonings.

  5. Add the dairy free heavy cream. Let simmer for 4 minutes.

  6. Add the parmesan cheese slowly while stirring the mixture together.

  7. Let simmer for 3 minutes.

  8. Add the pasta water.

  9. Let simmer for 5 minutes.

  10. Add the cooked and drained pasta and mix together.

  11. Serve warm.
