Tater Tot Casserole - Gluten Free Dairy Free

This recipe is so delicious and makes lots of servings! I will say this recipe takes a little longer than my other recipes. However for people like me who love tater tots, it is so worth the extra time!!

I found this recipe on melissasouthernstylekitchen.com and modified it to be gluten and dairy free.


Ingredients:

2 packages Tater Tots, I use the Alexia’s brand.

1 cup Dairy Free Monterey Jack Cheese, I use the Daiya brand. Honestly, you could use any type of cheese.

3 strips of cooked bacon, chopped. You can also use pre packaged bacon bits, just make sure there are not any added ingredients that contain gluten or dairy.

4 eggs

2 green onions, sliced



Directions:

  1. Preheat the oven to 425 F.

  2. Grease a 9x13 baking dish and add 2 bags of the tater tots so there are approximately 2 layers of tots.

  3. Bake the tots for 20 minutes.

  4. Take a tablespoon and make pockets/holes in each corner of the baking dish.

  5. Then add the yolk of an egg to each pocket.

  6. Add the cheese on top.

  7. Pour the egg whites over the tots.

  8. Sprinkle bacon bits over the tots.

  9. Bake for 10 minutes or until the tots are golden brown and the egg is cooked.

  10. Sprinkle green onion on top and serve.
