Zucchini Buffalo Chicken Boats - Gluten Free Dairy Free

You have leftover Buffalo Chicken Dip?? I have the perfect recipe that is low carb and delicious!!

Ingredients:

4 small-medium zucchini

About 1-2 cups of Buffalo Chicken Dip. For a dairy and gluten free version, I will put the link on the bottom. Also, it is under the appetizer tab of recipes. :)

Daiya Mozzarella cheese



Directions:

  1. Preheat oven to 400 F.

  2. Cut the zucchini in half and scoop out the middle section. Salt and pepper zucchini to taste.

  3. Add the Buffalo Chicken Dip.

  4. Place the Zucchini Buffalo Chicken Dip onto a greased baking sheet.

  5. Add the Daiya mozzarella on top.

  6. Bake for 30 minutes.
